All the ingredients in this are super in season right now so you would be silly not to make the most of them. This also blows an awful potato salad right out of the water if brought to a pre-season barbecue. Just saying.

Adulting. I hate it. I really do.
Sophie you should start saving real money. Sophie you need to think about your career. Sophie you don't really want to still be single when you're 30, all the good ones will be taken then.
I made friends with a flat of boys recently. They committed the ultimate 'anti-adulthood' act the other day. They bought a deep-fryer from Kmart for $35.

Avocado Smash with Golden Kumara Latkes
Avocados for all of my university life were a fruit of luxury. I would never buy them. The only time I would eat them is if I was home for the holidays. Sure they were only $2.50 a pop but as a student, $2.50 could have also bought me a lot of potatoes. Even now as a tax paying and contributing member of society I am reluctant to spend more than $2 on an avo. mainly I think it is because sometimes they are so hit and miss and there is nothing worse than forking out $4 for a single fruit and going home to find that it is riddled with black spots. Utter heartbreak.

I went to Vietnam last November, as you do. I took all these photos of ALL the food I ate but the whole thing was too overwhelming to even think about writing about it here. Since I got back I have been meaning to make pho, my favourite Vietnamese dish. Pho, pronounced 'fa' is a clear broth soup full of noodles, herbs, chilli and the meat of your choice. I saw a recipe for these noodles. I became fixated on these noodles. I studied the ingredients list, almost committing it to memory. I spent three days curating the materials required to bring these into fruition. I made the chilli oil in advance for optimum infusion. I even did a test run to make sure I got the method down perfect. I wanted noodles.

My raging Saturday consisted of buying vegetables, visiting my Nana, cooking vegetables, going to see an animated Pixar movie with my parents where I then wept when the imaginary friend got forgotten and then coming home and giving myself a wax. It was so raging. I could have joined the party upstairs but instead I put my ear plugs in and went to bed so that I would be well rested for my early morning spin class. Judging by the number of people who liked my look how raging my life is..not post on Facebook it would suggest I am not alone.

I read somewhere that root vegetables are the kale of 2015. This news excites me greatly as I am the kumara's biggest fan.
Speaking of kale and all things healthy, I have been trying to nourish my body with more than just scrambled eggs three times a day. I love eggs, they are so cheap and such a great source of protein. The only problem is that while I love a good salad, my budget and enthusiasm gets in the way. I feel like the lack of colour may be a contributing factor so my dwindling afternoon energy levels (that or the 5 hours sleep I get might not help either).
